This matcha oatmeal bake is a delicious warm vegan baked good that is completely gluten-free, zero sugar (yet just as sweet) and high in protein. You can easily make this plant-based recipe in the air fryer or the oven. Topped with vanilla vegan yogurt and dusted with ceremonial grade matcha powder.

I used my air fryer and for this one. The air fryer I have has been actual game changer for me. It cooks everything to perfection and saves so much on time. It’s great for small batch recipes such as this one.

This matcha oatmeal bake creates two servings, but you can always adjust the quantities at the recipe card down below. Before we get into making this recipe, let’s talk about how nourishing this matcha oatmeal bake is for your body.

Health Benefits of this Matcha Oatmeal Bake

Oats: According to Harvard School of Public Health, “Oats contain several components that have been proposed to exert health benefits. The primary type of soluble fiber in oats is beta-glucan, which has been researched to help slow digestion, increase satiety, and suppress appetite. Beta-glucan can bind with cholesterol-rich bile acids in the intestine and transport them through the digestive tract and eventually out of the body. Whole oats also contain plant chemicals called phenolic compounds and phytoestrogens that act as antioxidants to reduce the damaging effects of chronic inflammation that is associated with various diseases like cardiovascular disease and diabetes”

Monk fruit: This natural sugar alternative has been shown to support weight loss as it contains no calories. It’s an excellent alternative for those especially with diabetes. Some studies have shown that has anti-inflammatory and anti-cancer properties according to medical news today.

Other ingredients in this recipe are: vegan vanilla protein powder. I personally love using Ka’chava. Plant-based milk – I’m a fan of Good Karma flaxseed milk. You’ll also need coconut oil, baking powder & baking soda.

That’s right, this recipe only calls for 8 simple ingredients, plus vegan vanilla yogurt to top it off if you so choose. I recommend it… My go-to yogurt brand is Forager Project organic yogurt.

Notes & Tips for Making this Matcha Oatmeal Bake

If you decide to make this in the oven as opposed to the air fryer, then I recommend putting the ramekins onto a baking sheet to make your life easier. I would also suggest increasing the serving size as it’s a bit silly to heat up a whole oven just to bake two little matcha oatmeal bakes.

Ingredients

  • 1 cup 1 oat flour (finely ground)

  • 2 scoop 2 vegan vanilla protein powder

  • 2 Tbsp 2 ceremonial grade matcha powder

  • 2 Tbsp 2 granulated monk fruit

  • 1 tsp 1 baking powder

  • 1/2 tsp 1/2 baking soda

  • 2 tsp 2 melted coconut oil

  • 1 cup 1 vegan milk

  • pinch of salt

  • Toppings
  • vegan vanilla yogurt

  • ceremonial grade matcha for dusting

Directions

  • Preheat air fryer or oven to 350°F. In a medium mixing bowl, whisk together all dry ingredients: finely ground oat flour, vegan vanilla protein powder, matcha powder, granulated monk fruit, baking powder, baking soda and pinch of salt.
  • Once well combined, add in melted coconut oil and vegan milk. Mix until it creates a thick and smooth batter.
  • Evenly distribute matcha oat batter into ramekins. If using the air fryer, bake fro 15 minutes. If using the oven, bake for 25 minutes. Keep an eye and bake until golden brown on top.
  • Allow to cool before serving then top it off with vegan vanilla yogurt and lightly dusted matcha powder. Enjoy!
