This easy overnight oats is something that I love to keep stored in the my fridge. It makes mornings so much easier as I make a big batch of it for the week and throw it in a small serving bowl in the mornings. Get creative with how you top it. I use whatever fresh fruit, seeds and nuts that I have on hand. I drizzle it with a bit of maple syrup and then I’m good to go. In this recipe I show you how to make it with frozen blueberries, bananas and pumpkin seeds, but again, you can choose whatever fruit, seeds and nuts you desire.

Ingredients for easy overnight oats

:: dry ingredients ::

1 cup of oats
1 Tbsp of chia seeds
1 Tbsp of flaxseeds
1 Tbsp of hemp seeds
1/2 tsp maca powder

:: wet ingredients ::

1 cup of silk organic plant milk
2 Tbsp vegan yogurt (I like using kite hill)

:: fruit, seeds + toppings ::
1 banana
1/2 cup of frozen blueberries
sprinkle pumpkin seeds + drizzle maple syrup when serving

Method

In a glass food storage container or jar, place all dry ingredients and mix together until fully combined.

Then mix in wet ingredients. Mix in chopped fruit. Place lid and put in fridge overnight. Store in fridge and serve with pumpkin seed and maple syrup. Enjoy!

It’s a very easy and straight forward recipe. I never get tired of it as I change it up with the different fruits I put in it. Sometimes I add in cinnamon and vanilla. It just depends on my mood when I’m making it and what I have on hand.
