This Vegan Frittata is a hit for a savory and fueling plant-based breakfast. This is made with Just Egg which is a vegan product that uses a mung bean base.

Since I’ve gone fully plant-based, the toughest things for me to give up were eggs and cheese. When Just Egg product came across my radar, it satisfied all of the egg craving dreams. It tastes like eggs, fluffs up like eggs… it might as well be eggs.

Ingredients needed for this Vegan Frittata

It only takes a few simple ingredients to make this vegan recipe. You will need the liquid Just Egg, garlic, shallots, spinach, garlic powder, salt, pepper, avocado oil spray, powdered smoked paprika and parsley.

This recipe will need to be made in a cast iron skillet. I used this 12′ cast iron skillet. It’s important to cook this in a cast iron skillet as this will be prepared half on the stove top and half in the oven.

A mixing bowl will be needed to whisk together the “egg” mixture. You can get mixing bowls on The Plant Based Palette Shop.

Method to make this recipe

  1. Preheat oven to 350°F.
  2. In a bowl make egg mix by whisking together Just Egg, salt, garlic powder, pepper, and smoke paprika.
  3. Heat up the cast iron skillet on the stove top at medium-high heat.
  4. Once heated, fully coat with avocado oil spray. Add in minced shallots and garlic – careful not to burn it. Cook for a 1-2 minutes until fragrant.
  5. Add spinach to cooked garlic and shallots. Then pour in egg mix. Cook for 10-15 minutes until you can see edges begin to solidifying. Sprinkle more smoked paprika and parsley.
  6. Put in oven for 15-20 minutes until fully cooked.
  7. Cool completely in pan until ready to be removed with a spatula and cut. Enjoy!

  • 1 clove minced shallots
  • 1/2 cup spinach
  • 1 tsp garlic powder
  • 1/4 tsp smoked paprika powder
  • salt & pepper to taste
  • avocado oil spray
  • chopped parsley for topping
