Green Lentil Tortillas

These green lentil tortillas contain only two simple ingredients and are incredibly easy to make. It’s hard to come across gluten-free tortillas that have mastered the texture. I will say these green lentil tortillas hits it all when it comes to soft flexible texture and subtle, yet tasty, flavor which is what I look for when pairing with other foods. The perfect driver for dips or paleo plant-based wraps for an of your taco or burrito needs. I’ve been playing around with a more pegan diet and these wraps have definitely been a staple for this way of eating.

What is the pegan diet?

If you haven’t heard of pegan, I encourage you to check out Dr. Mark Hyman‘s work. He is the mastermind that coined the term pegan which is a play on paleo and vegan which are inherently opposite yet he merges them together to make the a lot of sense when it comes to an optimally way of eating. Of course, there is not one diet that fits all, but pegan takes the best aspects of paleo and vegan from all of his research and experience working with patients to find that basically eating a whole food plant-based diet is the way to go. No surprise there!

Although I am mostly whole food plant-based (with the occasional indulgences) I have been inspired after reading The Pegan Diet to eliminate as many things in my pantry and fridge that is packaged with a nutrition label. Hence why these green lentil tortillas have become a consistent go-to for me.

How to store these green lentil tortillas

I’ll make a batch of these and save them for the next couple weeks. They hold up quite nicely if you keep them in a ziplock in the fridge.

Health Benefits of Green Lentils

Lentils are an excellent source of fiber, protein, calcium, iron, potassium and folate. According to Web MD, “A single serving of lentils meets 32% of the fiber you need each day. It can lower cholesterol and protect against diabetes and colon cancer. A daily dose of fiber pushes waste through your digestive system and prevents constipation, too.

The potassium, folate, and iron in lentils also provide lots of benefits. Potassium counters the bad effects of salt and lowers blood pressure. Folate protects your heart and supports your body in forming red blood cells.”

Ingredients needed for these Green Lentil Tortillas

This is about to be a ridiculously short list. All you need is green lentils, water + salt. That’s literally it.

You’ll also need a high powered blender such as the vitamix blender and a non toxic, non stick pan.

Method for making these green lentil tortillas

1. Rinse off the lentils with a strainer.
2. Place lentils in a bowl with 2 cups of filtered water + salt. :et it soak at room temperature for at least 6 hours (I like to do it over night)
3. Put soaked lentils, water + salt in a blender and blend in high speed until smooth.
4. Heat a nonstick pan on medium heat
5. Once it’s warm, add about 1/4 cup of lentil batter and cook for 2-3 minutes on each side
