Ingredients for this Vegan Peppermint Bark

1 cup melted chocolate

1/2 Tbsp coconut oil

1 tsp peppermint extract (divided by 1/2 tsp)

1 cup vanilla vegan yogurt

1/4 cup peppermint extract 

1/4 tsp of natural red food dye

Method

First melt the chocolate either in the microwave or stove top. Mix in 1/2 tsp of peppermint extract into melted chocolate. Put parchment paper in a 8×8 or 9×9 square dish. Pour the melted chocolate and evenly spread into a thin layer using a rubber spatula.

Place in freezer for 20 minutes. While chocolate is freezing, mix vanilla vegan yogurt and 1/2 tsp of peppermint extract in a bowl.

Take dish out of freezer. Pour peppermint vanilla yogurt over frozen chocolate and spread evenly.

Using a dropper, place single droplets of natural red food dye on top of vanilla peppermint yogurt. Then use a toothpick to make swirled marble designs on top. (Careful not to over mix)

Place in freezer for at least 2 hours or over night. Once yogurt top is completely frozen, use a knife and cut into raw pieces. Enjoy!
