It’s incredibly helpful if you are trying to reduce the amount of pesticides and preservative intake which takes a large toll on our health.

This shiitake mushroom kale salad only involves six ingredients:

  • Kale
  • Olive Oil
  • Seasoning
  • Garlic
  • Onion
  • Shiitake Mushrooms

All of these ingredients in the shiitake mushroom kale salad contain so many great health benefits.

Kale is one of the most nutrient dense foods on the planet. It is an excellent source of carotenes, vitamins C, E, B6, B1, B2 and manganese. It’s a great source of fiber and includes essential minerals such as copper, iron and calcium.

Olive oil is an excellent source of oleic acid, an omega-9 monounsaturated fatty acid. It is also a great source of Vitamin E.

Garlic is an excellent source of vitamin B6. It is also a good source of manganese, selenium, vitamin C, phosphorus, calcium, potassium, iron and copper.

Onions are a very good source of vitamin C, B6, biotin, chromium and dietary fiber. Onion possesses many of the same positive effects as garlic.

Shiitake Mushrooms are an excellent source of selenium and polysaccharides. They are also a good source of iron, protein, fiber and vitamin C. Shiitake mushrooms have been used medically in Chinese medicine for more than 6,000 years. There are compounds in shiitake mushrooms that have the ability to heal and strengthen the immune system. It’s also been proven to lower cholesterol levels.

Shiitake Kale Salad

Prep Time 3 minutes
Cook Time 7 minutes
Servings 1 serving

Ingredients
  

  • 1/4 cup shiitake mushrooms
  • 2 Tbsp olive oil (divided portion for saute + portion for salad)
  • 1 clove minced garlic
  • 2 Tbsp finely chopped onion
  • 2 handfuls kale
  • 1/4 tsp italian seasoning
  • salt + pepper to taste

Instructions
 

  • Finely chop your garlic and onion. Heat up a small pan on medium-high heat. Place 1 Tbsp of olive oil. Add in garlic and onion cook until fragrant. Turn down heat to make sure to not over burn.
  • Make sure your mushrooms are washed and dry. Add shiitake mushrooms to the garlic and onion pan. Cook and stir until mushrooms have softened. Take off the heat and set aside.
  • Finely chop kales and remove all stems. Add to a mixing bowl with olive oil, seasoning and salt and pepper to taste. Use hands to massage kale until it is a soft texture.
  • Transfer massaged kale to a serving plate and top it with the sauteed mushrooms. Enjoy!
