Lion’s Mane Mushroom Sandwich
This lion’s mane mushroom sandwich is packed with flavor and nutritional value. Lions mane is an adaptogen which means it responds to any stressors in the body, especially when taken regularly.
One of the most commonly known benefits of lions mane is that it is good for the brain. Lion’s mane for the brain… pretty easy to remember! There are so many health benefits to lions mane. Here are a few listed below:

Ingredients for Lion’s Mane Mushroom Sandwich
- raw culinary lion’s mane
- minced garlic
- vegan hamburger buns (check out this recipe for the best homemade vegan hamburger buns)
- vegenaise (vegan mayo)
- avocado
- sliced tomato
- arugula
- vegan butter
- garlic
- green onions
- herb seasoning
- salt

Method
- In a frying pan, add vegan butter on low heat. Once fully melted, add in minced garlic on low heat for 10 minutes. Add in shredded raw lion’s mane mushroom and stir around on medium heat until soft. Add salt and herb seasoning to taste.
- While the garlic is slow cooking, cut the vegan hamburger buns in half. Place in the oven on broil for 3 minutes. Once toasted spread vegan butter onto the toasted buns.
- On the buns spread vegan mayo. Add sliced tomato, sliced avocado, arugula, garlic butter lion’s mane, chopped green onions and vegan mayo on the top bun. Enjoy!

- 4 slices avocado
- 2-4 slices tomatoes
- 1/2 cup arugula
- 2 tsp chopped green onion
- dash of herb seasoning
- salt to taste
