Chocolate Hemp Protein Bars
These bars are perfect for post-workout or guilt-free desserts. A sugar-free mixture of nutty butter & chocolate topped with superfoods. It tastes just like everyone’s favorite peanut butter cup.
Chocolate Hemp Protein Bars
Delicious chocolate hemp bars that's packed with protein and a guilt-free sweet treat.
Ingredients
For the Protein Base:
- 1 3/4 cups Almond Flour
- 1 cup Unflavored or Vanilla Plant Protein Powder
- 1/4 tsp salt
- 1/4 tsp baking soda
- 1/3 cup stevia
- 1/2 cup any type of nut butter I used peanut butter
- 1/4 cup plant milk I used macadamia milk
- 1 tsp vanilla extract
- dash of cinnamon
For the chocolate topping:
- 1 cup shredded cocoa butter
- 2 Tbsp raw cacao powder
- 2 Tbsp coconut oil
- 2 Tbsp stevia
- 1/2 tsp vanilla extract
- dash of sea salt
- 1 cup chocolate chips
Topping:
- handful of pumpkin seeds, hemp seeds + cacao nibs for topping
Instructions
Protein Base:
- Line an 8×8 inch square baking dish with parchment paper
- Place almond flour, protein powder, salt, baking soda and stevia in a large mixing bowl, stirring to combine.
- Add nut butter, almond milk, and vanilla. Stir until you have a ball of "dough."
- Using wet hands, press evenly into prepared baking dish.
Chocolate:
- Take a large saucepan and fill it up with 2 inches of water.
- Bring to a boil over medium high heat. Then set a medium glass, ceramic or metal mixing bowl on top, making sure it's not touching the water (this creates a "double boiler").
- Placing shredded cocoa butter into the pot until melted.
- Add raw cacao powder, coconut oil, stevia, vanilla and sea salt into melted cocoa butter. Whisk everything together over medium low heat until no clumps.
Protein Base + Chocolate:
- Place melted chocolate over the protein base
- Freeze for 15 minutes. Take out of freezer. Chocolate should be semi-soft.
- Add pumpkin seeds, hemp seeds & cacao nibs into chocolate topping.
- Put back into freezer for 1 hour before slicing into bars.
